Kirorero - Anaerobic Natural - Rwandan (Filter Roast)
The Kirorero washing station is run by COOPAC, a cooperative established in 2001 and now boasting 2198 members. The group is committed to increasing the quality of the coffees produced so farmers receive great financial reward for their efforts. They are currently providing shade tree samplings and agroforestry education to increase the collective yield and quality of its members.
The processing of this lot is not common to Rwanda and demonstrates their intent on increasing quality. The cherries were placed in sealed bag to undergo a 72 hour anaerobic fermentation. This has increased the intensity of its candy sweetness.
