Augusto Calle - Peru


El Higueron is a 3-hectare farm with 2 hectares planted with coffee in two varieties: Caturra and Yellow Caturra. Owner Augusto Calle Rafael ensures the coffee is picked ripe, and it is depulped the next day. Then it's fermented dry for 25 hours before being washed three times, and then it's dried in parabolic driers or on rooftops for 15–20 days.

Expect a bright tart sweetness with a complex acidity.
