Ismael Hassen Aredo - Washed - Ethiopia (Filter Roast)
Since 2012, Ismael and his family have owned and operated Kayon Mountain Farm, producing coffee from 300 hectares of trees. With 30 permanent staff and a few hundred seasonal employees, the fields are strewn with indigenous trees to both shade the coffee and create natural fertiliser from compost.
Ismael produces both washed and natural lots. His washed coffees are hand-picked ripe, and sorted for pulping the same day. The mucilaged seeds are fermented for 24-72 hours depending on ambient temperature, before they are rinsed with clean water and spread on raised beds to dry over 12-18 days.
